I'm confused... at turn 13/14, the "GP" track has the tighter NGK chicane, and the "GP (GT)" track has the lesser Veedol chicane. So, which one is the actual race to be done with? GP or GP(GT)

Just to reiterate guys make sure that you are practicing the GP circuit and not the GP(GT) one. I wasn't even aware there was another variation with just the chicane being different. That iteration of the circuit is quicker due to the much faster final chicane and I suspect that is where Oddball's 2:01 time came from.

Got in another run tonight and like @Neale Horne reverted to the default setup and immediately was matching my tweaked setup times. Just a tweak to the gearing and I slipped into the 2:04 range.

Strategy now is the question. Several ways to play it here so should be interesting

Karl was on just now Max and was able to create a lobby so it must be something your end.

Just tested the lobby creation myself Max and all is good . Maybe reset your router asap as if you are having problems creating a lobby we may have trouble getting you into our lobby.
