After any online session you can rename the "cr" file inside your replay folder in the Documents>Assetto Corsa folder. This saves the replay of the most recent on-track session you had, in single or multiplayer.

However this file only contains a replay of the previous session you had, so if you've been in any session after the race you want the replay for it will be overwritten. The max file size for a replay is 500mb, so some longer races with many cars may not save the first few laps, but this happens rarely since Kunos have optimised replay sizes in updates.

So just make a habit of doing this after a race you want a replay for until Kunos implement a better system.
