Modifying official cars engine and grip

Hello,
I would like to run a simple test. The idea would be to take say a 125cc kart as it is in AMS and modify its engine power and tyres grip to test an hypothetical "uber kart" and see how safe and exploitable it could be (on a real kart track).

So my idea would be to do a copy paste of the kart folder. However i don't know if the engine and physics files are accessible or not? In other words, how could i do such a thing?

How do entirely new mods are created? do they use the same physics files than the stock content?
Im not a modder but I'm assuming you can make something that works in basic rfactor as that is open source for example and port it over to AMS and it'll work since its essentially the same game. However physics updates or comparing physics files to Reiza's cant be done because Reiza has hidden that obviously.
