I don't understand this 90 degrees limitation, is it so hard to move hands more than 90 degrees? AC and pCars do it

my guess is it's just not a priority the animation looks filler to me.

No wheel, no hands... sitting in my DIY rig, my CSR fits right into the cockpit on my 50" TV. Will switch to wheel and hands on, when my DK2 arrives.

Both hands and wheel off. Too distracting plus my wheel is pretty close to the screen.

It depends for me - normal display(s) = wheel and hands off
Rift DK2 = definitely on, not doing so would feel really strange

Used to keep them on as i liked the visuals. But it distracts me, as they are at the same position as my real hands and wheel, so it feels odd. I run single screen, with very low fov so it feels more real to just see my own hands.

Depends on whether I play on the Rift or my monitor. On Rift I use wheel on, and arms sometimes (not sure with R3E as I haven't got it running well with the Rift yet), depending on the game and it's arm animations.
When playing on a monitor I turn both off, I already have arms and a wheel, no need to see a virtual one.
