Is there any way to adjust race lengths in career? I'd like to change some of these later races to 15 laps instead of 30.

On PC? Yes.
You can edit the event.ini for each event located in assettocorsa\content\career\seriesxx\eventxx.
I'm actually surprised it can't be done in CM.
