You adjust it through the tuning menu ine suspension settings. Last menu inthere is smth with steering lock.
Inthere you can go change it. I normally change it there to what i also have in the profiler menu. But for this car the default 990 was the best imo.

P.s.- how do you adjust steering lock 'in-game'? I'm using 450 for my wheel at the mo

Ross, it's under Tune Car where car setups are done. Steering is found under Suspension/ Roll Bar Steering.
I have a similar Rotation setting to you, and I use full lock in the car setup for most cars (about 792 I think).
You can also fine tune your RBR Controller settings under Options too. Someone has posted some good settings for Steering Wheel but I can't find it right now. If I find it, I'll edit this post.
