VR Headset is great for immersion, but it can be annoying to have the car clipping through your view when youre not EXACTLY in the right place.

F1 headrests are very tight to the face and thus can clip easily.
Unfortunately most mods dont have a separate mesh for the headrest; the newly released RSS FH 2022 does have a separate mesh, so it can be disabled

I have not had issues with headrest clipping my view, but on totally unrelated comments I find the low quality of the VR mirrors a little unimmersive.

It can depend on if your head position is fixed or not.
Regarding the mirrors... is that including usage of the csp realmirrors?
