First back-up the file gamepad.json stored in your Steam folder at this location ..\Steam\SteamApps\common\Le Mans Ultimate\UserData\player.

Replace it by the file available here (it will use my remap though, so be mindful about that if you care about your mappings) or alterantively look for the below text in your gamepad.json:
"Steering Speed Sensitivity". Replace the value from 0.6 to 0.3, it should look like this :
"Steering Speed Sensitivity":0.3,

Lots of tweak - removal of "default" assist

A few new variables have been edited to better tweak controls, in particular the reduction of a steering assist that is present regardless of what gameplay settings you use (even with all at off).
