Game stuttering!

Hey all
System Specs:
i5 3570K O/C to 4.2
HD 7870 2GB
12MB RAM
Windows 7 ultimate 64bit
Triple AOC 23" monitors.
Getting really bad stuttering, fps goes from 90 (with ten cars on track) min up to 170 ish.
Game settings are: Track High, Player High, opponent High, shadows Med, Textures Med, special effects Med.

Don't get any stuttering In RF2 or AC, Is there a way I can cap the FPS in the player cfg?
Weird thing Is, when I was running the demo It was silky smooth, since buying the game I get stutters!

Any help would be great.

PS Tried vsync, still the same.

Do you have a really high timescale setting.... also ive heard of turning off replays or decreasing replay quality can help.

Got replays turned off, all timescale settings are on normal, It's strange cos it seems to be more of a problem on certain tracks, Floripa Is a nightmare whereas Monaco there Is no stuttering? I would have thought that Monaco would be more graphic hungry than Floripa but that's what's happening!
