FOV ? Mirrors ?

I have my field of view at 35 ( F1) ,but I think I would like to go as low as 30 ,we're can I edit this ,is it possible .
Also when I look behind I don't see my rear wing ,its missing can this be edited so i see it .
and the mirrors on the side if I could just put my hand across and pull them a little bit towards me to see more to centre of track

you can change FOV as you like by editing *.cam file manually.
For example, if you wanna change FOV to 30 on SCV8, open GameData\Vehicles\StockV8\StockV8_cams.cam
and then find and edit the lines something like as follows:

LocalCam=COCKPIT
{
Fov=(30.000000, 30.000000)

Additionally, don't forget that you have to choose the in-game FOV option to "default".

And mirrors are controlled by the same controls as the seat, except you need to hold ctrl or shift down as well (can't remember which one offhand)
