Variable benchmark results help required

I am getting mixed results from online and single play with assetto corsa which does not make sense. I can play one game and get over 120 fps then the next race at the same track struggle to get 60fps. If I restart the game and or computer it fixes the problem. I dont have overheating or throttling issues as I keep an eye on those and my computer is just for gaming so very minimal in terms of what is on it.
Intel core I7 2600k
RTX 2060
16gb Ram

As you can see I have upped the quality and got more frame rate?? I play RF2 and do not have this wild swing in terms of frame rate.


Any help would be much appreciated.
