Is there any way to use it to build maps without having the massive GOOGLE logo stamped all over the terrain? or is there another program I can use to do exactly the same thing?

Try a program called SAS Planet. One useful feature is you can specify a rectangle (top-left and bottom right corners), and a zoom level and the program can automatically stitch together all the tiles within that area into one image. You have to manually zoom in on all parts of the rectangle to get the tiles in the first place, but if you're methodical it's quite simple.
