I wonder, what is the correct configuration of a server Assetto Corsa, which does not allow LAG, and what would be the ideal port.

AFAIK, ports do not have to do anything with lag. Just use an open port.
For the best experience I would recommend using a client refresh rate (Hz) of either 20,25 or 30. A full grid with 30Hz can cause some lag.
