Please help me choose a Gaming PC (Part 2)

Okay guys - final thread before I take the plunge and do it.

So after much discussion in 'please help me choose a gaming PC part 1' I've decided to go to a website, choose the parts, and get them to build the machine (and possibly overclock). I was considering doing the building myself but im a complete newbie and some horror stories regarding diagnosing problems after the build has put me off.

The question is now - how do I get the best out of my £1000 budget? I would love for everybody to put themselves in my shoes for a few moments and help me make my decision in what to buy. You have owned an xbox 360 for god knows how many years along with a fanatec wheel and pedals enjoying games such as grid autosport, forza and the F1 titles. You want to delve into the territory of sim racing with games such as iracing, asseto corsa, RFactor 2 etc etc. You don't have a huge budget but you want to have a great first pc racing experience so with this budget you want everything to run as smooth as it can (if this is possible) on the highest settings. You look at the following 5 builds. What one do you go for and why?

Short question, how do you call a thousand pounds not a huge budget? My PC in total cost me around €800 which is IMO quite a huge budget and got me specs that still allows me almost every game to be played on ultra settings, and my G27 is included for that price. True, I already owned a harddisk and a computer case worth €100 euro's.
But still 700 pounds could bring you a high-end PC with racing wheel which would leave a lot of people jealous at you :p
I would call 1.000 pounds a huge budget :)

Dont get me wrong Ricardo - £1000 is a lot of money! Being a newbie to the gaming word i just didnt think it was a lot for a gaming pc. Especially when i was browaing for some PC's going for crazy amou ts like £6000 :o and then i look in the 'show your cockpit' thread and think "these guys are serious - they must have spends 10's of thousands " lol

I'm actually building also a gaming pc for my nephew and we also have same budget the gaming rig i'm going for is CPU-Intel Core i5 4690K/ Motherboard-Gigabyte Z97-HD3 GPU-MSI 970GTX Liquid Cooling-Corsair H100i PSU-EVGA super nova 2.0 750w case-nzxt switch 810 white I already have gaming rams which are HyperX beast 16GB 2400Mhz DDR3 should be able to run any game any settings I've had AMD builds and Intel and even though AMD are my favourit due to the price mainly, but when it comes to hard core gaming then intel and nvidia has to be the clear winner all this is roughly £1000 give or take few extra's roughly shouldn't be more than a 1200

Im just about ready to order this pc after much debating over which one to choose. The only thing that is putting me off is the fact it only has 2 x 3.0 Usb ports :(

The website does not seem to allow me to add more ports

What would be the minimum i would need?

What would be the disadvantage of added an USB adapter/extension to create more ports?
