May I ask what are the recommended settings for such a huge field? I plan to disable PP and set every graphics option to a reasonably low setting, but anything else? Is it worth reducing the number of visible cars?

I would just test it with AI.
Little tip, disable rain drops, this brings a big performance boost.

It is, but disabling rain effects could still improve the performance of your game - refer to this post, as well as the one immediately below it.
