F1 2017 F1 2017 Noob - Basic Questions

I'm brand new at F1 2017 although have some experience with other racing sims. I have a few basic questions.

1. How do I access the Tutorials? I don't mean just watching the videos - I mean how do I participate in, say, Track Acclimatization (to actually practice at a chosen track)? Can I do this withOUT going thru Career Mode (which I hate)?

2. Where do I find the overall documentation for the sim? (I have the Steam version.)
