My side monitors (3 x 27" monitors) distort the image (stretched) in GSCE. Is there a way to set up triples properly in GSCE? Is there a guide to get them set up properly?

I have only changed the resolution during setup to my NVIDIA Surround resolution and changed FOV in game and seat position.
 
Multiview will do the trick, it is how each monitor get's rendered independently so that each monitors "stretching" is the same as your single monitor when playing in single screen mode - basically hardly any.

You will want to lower the FOV to either 1:1 with the real-life size of objects, or at least close. Having an arcade, single-screen style FOV will make the graphics on the outer monitor look like they are bending away from you (not stretched, but just bending outward), however if you use the proper FOV, or close to it, then it will look perfect.
 
Boom. Looks perfect now. Is there a FOV calculator to use for GSCE? I use 179 in iRacing.

By the way, iRacing uses horizontal FOV (H.FOV) not vertical (V.FOV), so in that calculator just use pCars for your iRacing FOV.

179 H.FOV w/ triple 27" 16:9 monitors means that your eyes are about 20.5" from the centre monitor. When I convert those measurements to V.FOV (rF2, GSC, AC, etc.) I get 36 degrees for your V.FOV games.
