I play with an Xbox 360 controller, but have found that the handling of the cars seem to change dramatically depending on the car view, I was playing at the start with the view that's inside the middle of the car and the cars cornered like they were on rails, then I switched to the behind the steering wheel view and the cars seemed completely different, not nearly as much grip, anyone else noticed this?

I can't really help, but I wanted to say that it might be the fault of the camera giving you the impression the car is not moving as you thought, because you can see more interior in comparison to the exterior. Just something to think about, I haven't played with a gamepad so I can't say, but playing from a different camera and especially a camera that has a larger angle (like the one you are describing) gives a very different sense of speed and movement.
